RECIPE
It was a typical dish of the poor peasants of Montepulciano because the ingredients are only water and flour (egg at the discretion).
Knead on a work surface the flour with warm water,a pinch of salt and a teaspoon of olive oil, until a dough is smooth and compact. Roll out the dough on floured surface, oil it and let stand for about half an hour.
After you have floured the pastry, you cut strips of dough of about 15 cm and thickness 0.5 cm.Pass over the strip prepared the floured rolling pin , making the right impression, the PICI ,created , detach from each other
with your fingers and lay them out on a floured surface and let rest about 30 minutes.
So pici are ready to be cooked in salted water and boiling only to be served at your leisure.
